Pesto Salmon with Veggies
Ingredients
4 (6 oz) skinless salmon fillets
.5 lb fresh green beans
.5 lb fresh asparagus
3 tsp olive oil, divided
s & p, to taste
4 T pesto (homemade or store bought)
4 tsp fresh lemon juice
Directions
- Preheat ove to 400 degrees
- Cut 4 pieces of aluminum foil into 14-inch lengths
- Toss green beans and asparagus with 2 tsp olive oil, and season with s & p
- Divide in to 4 servings and place on foil
- Place salmon on each foil packet
- Drizzle each with remaining olive oil
- Spread 1 T pesto on each piece of salmon
- Drizzle 1 tsp fresh lemon juice over each piece of salmon
- Wrap each into a loose foil packet
- Place all packets on a baking sheet and bake 20-28 minutes
(cook times will vary depending upon oven, salmon thickness, and desired degree of doneness)
