RecipeCorner – Pesto Salmon with Veggies

As a healthcare staffing company we want to promote a healthy lifestyle.

NHCS will be posting Friday fitness related items including health information, easy to prepare recipes, exercise, and motivation. We can all use a little encouragement at times and hope if you have a favorite item to share, you will let us know.

Pesto Salmon with Veggies




4 (6 oz) skinless salmon fillets
.5 lb fresh green beans
.5 lb fresh asparagus
3 tsp olive oil, divided
s & p, to taste
4 T pesto (homemade or store bought)
4 tsp fresh lemon juice


  • Preheat ove to 400 degrees
  • Cut 4 pieces of aluminum foil into 14-inch lengths
  • Toss green beans and asparagus with 2 tsp olive oil, and season with s & p
  • Divide in to 4 servings and place on foil
  • Place salmon on each foil packet
  • Drizzle each with remaining olive oil
  • Spread 1 T pesto on each piece of salmon
  • Drizzle 1 tsp fresh lemon juice over each piece of salmon
  • Wrap each into a loose foil packet
  • Place all packets on a baking sheet and bake 20-28 minutes
    (cook times will vary depending upon oven, salmon thickness, and desired degree of doneness)
