Avocado Chicken Salad
2-3 boneless, skinless chicken breasts
1/4 chopped onion
juice of 1/2 lime
2 T cilantro
s & p, to taste
- Grill or bake chicken breasts until done (may also choose to use pre-cooked rotisserie chicken, shredded)
- Let cook. Then shred chicken meat.
- Mix with all other ingredients.
Serving suggestion: Serve on sliced granny smith apples and top with a pecan half
