Vanilla, chocolate, tapioca, rice……we all have our favorite pudding. But have you tried Chia pudding?
Chia (an ancient Mayan word for “strength” seeds provide sustainable energy. In ancient times chia seeds were widely used. Only recently have they become known as a modern day superfood. Chia seeds are packed with antioxidants and are high in protein, Omega 3, and fiber.
1/3 cup chia seeds
1.5 cups almond milk
2 T maple syrup
1/2 t vanilla
- Combine all ingredients in a pint jar. Cover with lid and shake vigorously
- Refrigerate for an hour, then shake vigorously again
- Chill for another 4 hours (or overnight)
- Eat as is, or top with sliced fruit, nuts, or granola
