No Bake Lemon Balls

 

Ingredients

1 1/2 cups almond flour
1/3 cup coconut flour
1/2 teaspoon pink Himalayan salt
1 teaspoon maple syrup
3 lemons, juiced
1 lemon, zested
2 teaspoons vanilla extract
1/4 cup coconut oil, melted

Directions

  • Place all ingredients into a food processor and pulse til well combined
  • Take 1 teaspoon and roll into a ball shape
  • Refrigerate for 30 minutes (until firm)
  • Keep refrigerated until ready to serve
