RecipeCorner – Save Room for Skinny Sweet Potato Casserole this Thanksgiving!

The traditional sweet potato casserole at Thanksgiving is a family favorite. However, trying to eat healthier makes me think twice before spooning up a huge helping this holiday. I am “thankful” I found this healthier version!

 

Skinny Sweet Potato Casserole

Ingredients

Filling

3 pounds sweet potatoes, peeled and cut into chunks
1/3 cup fat-free or almond milk
4 large egg whites
2 tablespoons honey or maple syrup
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Topping
3/4 cup chopped pecans
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Directions

  • Bake, boil, or microwave sweet potato chunks until tender
  • In mixing bowl, combine all “Filling” ingredients, mixing well
  • Transfer to a 9×13 inch baking dish well greased with coconut oil
  • In mixing bowl, combine all “Topping” ingredients, mixing well
  • Spread topping mixture onto filling mixture
  • Bake, uncovered, at 350° for 25-30 minutes or until heated through
