Zucchini Spaghetti

2 large zucchini, spiralized (or use a vegetable peeler and julienne the slices)
4 Roma tomatoes, chopped
4 tablespoons sun-dried tomatoes (packed in oil)
1 cup sliced fresh mushrooms
1 tablespoon fresh garlic, chopped
1/4 cup fresh basil, chopped
1 teaspoon nutritional yeast
1 teaspoon smoked paprika
1 teaspoon red chili flakes (optional)
1 sweet onion, chopped


  • Mix all ingredients (except zucchini) thoroughly in a bowl.
  • Heat in microwave or on stovetop til heated through.
  • Add zucchini spirals to the mixture and stir to coat well.
  • Remove from stovetop and serve while hot/warm.
