Black Bean Corn Salad
- 30 oz can black beans, drained rinsed
- 30 oz can sweet corn kernels, drained
- 2 jalapeno, chopped (optional)
- 1 red onion, chopped
- 2 cups grape tomatoes, halved
- 1/2 cup green onions, chopped
- 5 T lime juice
- 1/3 cup olive oil
- 1/2 cup cilantro, chopped
- salt/pepper to taste
