RecipieCorner – Black Bean Corn Salad

Whether used as a side dish or as your favorite salsa, this is a winner!

Black Bean Corn Salad

  • 30 oz can black beans, drained rinsed
  • 30 oz can sweet corn kernels, drained
  • 2 jalapeno, chopped (optional)
  • 1 red onion, chopped
  • 2 cups grape tomatoes, halved
  • 1/2 cup green onions, chopped
  • 5 T lime juice
  • 1/3 cup olive oil
  • 1/2 cup cilantro, chopped
  • salt/pepper to taste


Thoroughly mix all ingredients in a large bowl. Refrigerate a minimum of 2 hours until chilled.
